Mommy and Me Chickpea Patties (Vegetarian Burgers)
This is a peanut free and milk free Vegetarian burger that could convert even the most dedicated meatatarian. My sister pointed me in the direction of this meat-free burger and I am so glad that she did! The combination of hearty chickpeas, carrot and egg create a pattie that you will for sure add to your repertoire. The unique blend of spices and the healthy veggies create a meal that is light yet satisfying.
2 1⁄2cup(s)cooked chickpeas, OR 1 can
1 medium uncooked carrot, peeled
1clove(s), medium sized garlic clove(s)
1 large egg(s), OR vegan substitute
2 Tbsp all-purpose flour, OR substitute ground oats
4 medium fresh tomato(es)
1 medium uncooked red onion(s), sliced
1 tsp ground coriander, could add 1.5
1 tsp ground cumin, could add 1.5
1⁄2 Tbsp olive oil, for pan
16 slices Sprouted Grain Breads Sprouted Grain Breads, Squirrelly, OR bread of your choice
1 tsp table salt (optional)
1 tsp black pepper (optional)
Drain and rinse the chickpeas. Peel and roughly chop both the carrot and garlic.
In a food processor add chick peas, garlic, and spices. Pulse until the garlic and chick peas create a paste consistency.
Add egg, carrot, and flour. Blend until the contents start to stick to the sides of the processor.
Preheat the pan to medium heat, add oil.
Divide the meat-free mixture into 8 equal parts, evenly shape into burger patties.
Fry the patties for 3-4 minutes per side, you want a golden brown exterior colour.
Serve with warm bread (or buns), a slice of tomato, and a ring of red onion.
