Dairy Free Chicken Pot Pie

When it comes to comfort food, Dairy Free Chicken Pot Pie is my absolute first choice. This recipe has been a winter staple since it was dubbed my favourite at our church’s potluck, way back in the 90s! Yup, I’m that old! Ha! The recipe has been on an index card for years and now I am sharing this wholesome recipe with you and your family. My mom is the best at making this recipe, but I hope I’m a close second.

Dumplings or Pie Crust?

This is a debate that I’d happily be a judge on a panel for any day. Dumplings are such a delicious, puffy topping to any Dairy Free Chicken Pot Pie but so is a pie crust. However, the flakiness of a pie crust topping really makes any dish taste even more scrumptious, don’t you think? This particular recipe calls for dumplings as I am still working out the kinks in a homemade dairy free pie crust that is as good as my Dadeo’s original recipe. These dumplings are flakey, puffy, and slightly sweet thanks to the coconut oil and almond milk.

Toddler Approved Dairy Free Chicken Pot Pie

This recipe is uber healthy, tasty, and toddler approved. When your little ones gobble up a homemade meal (without ketchup – HA!) you know it is a keeper recipe. We keep our meals as eat clean as possible and choose organic ingredients whenever we can. Eating homemade is often more economical, flavourful, and easier on the stomachs of little growing bellies.

Ingredients

Pie Base

  • 3 cups Cooked Chicken
  • 2 cups Pared and diced carrots aka take the skin and ends off
  • 2 cups Organic Chicken Broth
  • 2 cups Organic Frozen Peas

Creamy Filling

  • 1/2 cup Plain Almond Milk
  • 1/4 cup Organic All-purpose flour
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 dash Rosemary (fresh is best)

Instructions

  1. Preheat over to 400 degrees Fahrenheit.  

  2. Measure your frozen peas and set on counter. 

  3. Pare and dice the carrots into equal pieces. Add to the pot along with the stock and bring to a boil. Cook until tender (5-7 minutes). 

  4. Cut the roasted chicken up into bitesized cubes and put into dutch oven.

  5. Mix milk, flour, salt, pepper, and rosemary together. Stir into carrots and stock. 

  6. Add in thawed (frozen) peas. 

  7. Bring to a boil, it is important to stir this entire time. 

  8. Pour over the meat and gently mix it all together. 

  9. Place the dish into the oven for 20 - 30 minutes. If you are planning on making dumplings, it is vital that the pie be pipping hot (boiling) when you add the dumpling mixture on top.

Recipe Notes

There are two popular options for your chicken pot pie. You can make a traditional pot pie with dairy free pastry crust or you can add dumplings on top during the last 15 minutes of cooking. If you choose to use traditional crust, preheat the over to 450 degrees Fahrenheit and bake for 20 minutes.

Easy Dairy Free Dumpling Recipe

These dumplings are very easy to make but do require some attention to detail with the timing regarding the recipe.

Ingredients

Dry Ingredients

  • 2 cups Organic All-Purpose Flour
  • 4 tsps Baking Powder
  • 1 tsp Sea Salt

Liquid Ingredients

  • 6 tbsp Coconut Oil Melted
  • 1 cup Plain Almond Milk

Instructions

  1. Sift the dry ingredients together. 

  2. Melt the coconut oil, in the microwave. This totally depends on the power of your microwave, be very careful, it will be hot. Try 30 seconds and go from there. 

  3. Stir in almond milk, then coconut oil. Blend together until the flour is moist. 

  4. Take 1/4 cup measuring tool and fill to the brim. Plop the dough onto the simmering chicken pot pie contents. 

  5. Important! Do not lift the lid during cooking! No one likes soggy dumplings. Cook those dumplings for 15 minutes.

This recipe has come together after many attempts to make a good dumpling without the use of lard or actual butter.
