Guacamole is such an amazing snack for our toddlers to enjoy. The healthy unsaturated fats of the avocado are great for our little ones developing brains and growing bodies. As a Food Allergy Family we are often scrambling for ways to incorporate higher fat foods into our kidlets diets. We do not have have the ability to offer traditional dairy products which are known to be high in fats. Guacamole, Potassium and Your Toddler?

Did you know that an avocado has more potassium than a banana? Potassium is a mineral that is needed to help cells, nerves and muscles work properly, according to the Merck Manuals.* A single avocado has 975 milligrams of potassium, while a banana, well-known for being loaded with potassium, has only 487**. Do you meal-plan? If you do, try and add in this super easy, peanut free, no dairy, only real food ingredient pasta dish. My kidlets and I love it, and we hope you do too!

Healthy Toddler Recipes for the Family

Since finding out our oldest is allergic to peanuts and milk we have all made major changes to our diets. We are constantly looking to update old recipes that rely on butter, yogurt, or other unsafe products. In this process we have further eliminated as many processed foods as possible. It has become habit to read labels, check ingredients, and make sure the kids are eating the healthiest foods possible (most of the time!). I mean you see the “scoops” in the pic below right? 🙂  Let my research and slight OCD make your life a little easier.

“Guacamole” Pasta (healthy toddler meal)

This meal is delicious and free from peanuts and dairy. This toddler lunch only contains real ingredients which makes it an amazing choice. The healthy fats from the avocado help to develop little brains and set them up for success during their day.

Ingredients

  • 1/2 cup Hardez salsa
  • 1 ripe avocado
  • 1 tsp fresh lime juice
  • 1 tsp olive oil
  • 1 1/2 cups rotini pasta (raw)
  • Salt and pepper (to taste)

Instructions

  1. Cook Rotini pasta according to package.

  2. Add olive oil to the water before boiling.

  3. Peel and remove avocado from skin.

  4. Cut lime, remove one tsp worth of juice.

  5. Mash up the avocado in a bowl.

  6. Add in the Salsa.

  7. Drain pasta and mix with the avocado and salsa.

  8. Squeeze lime (if desired).

  9. Serve once it has cooled properly.

Recipe Notes

If you are hoping to have leftovers, do not add all of the pasta to the “Guacamole” mixture. I have found that the pasta does not taste that great the next day with the avocado added.
