Vegan Birthday Cake

By following amazing vegan families, and conducting my own research I now incorporate recipes into our weekly plans that are healthy and free from animal harm. This Vegan Birthday cake will even impress your most anti-vegan family member 😉
Yup! We have discovered some delicious brands that are dairy free and peanut free! The amazing thing about Enjoy Life is that their mini chocolate chips are, “made in a dedicated nut and gluten-free facility!”* For this particular recipe we used mini chocolate chips but you could absolutely use regular sized for the same great taste.
Ingredient List Questions?
It is important that you check each and every ingredient that you use for your family to make sure that they are safe. I say this because even in the few years that we have been living with food allergies, labels on some of our favourite products have changed. Some for the better, Kirkland Almond Butter is now labelled as, “made in a peanut free facility!” Yeah! Others however, now are in facilities that, “also process peanuts, milk etc.” It is crucial to check every single time. Right after the recipe, I list the name brands that we trust for baking. I call companies to check the safety of their product, especially if I do not feel their labels are clear. Most are very helpful and have the information readily available, or they will call or email you back within a few days max.

Vegan Vanilla Chocolate Chip Birthday Cake
Deliciously dense with just a hint of vanilla flavouring, this cake is what dairy free dreams are made of. With the careful selection of the best ingredients, this cake is also peanut free!
- 3.5 cups Organic All-purpose flour
- 2 cups White Sugar
- 2 cups Mini chocolate chips
- 1 tsp Sea Salt
- 2 tsp Baking Soda
- 1 tsp Organic All-purpose flour (for flouring the pan)
- 2 cups Vanilla Almond Milk
- 3 tsp Vanilla Extract
- 2/3 cup Vegetable Oil
- 2 tbsp White Vinegar
Preheat the over to 350° Fahrenheit.
Mix all the dry ingredients (save the chocolate chips) together in a large mixing bowl.
Slowly add the liquid ingredients to the dry, mixing well. Stir in the chocolate chips right at the end.
Sprinkle the flour on the base of the pan. Make sure to also include some on the sides to avoid the batter from sticking.
Slowly pour the batter into the 11 x 7 x 1.5 inch pan.
Bake for 30 minutes.
Carefully remove the cake from the oven. Use a toothpick to check if the cake has finished baking. Place the toothpick straight down into the centre of the cake, if it comes out "clean", then your cake my friend is done!
Allow to fully cool before adding icing or storing in the fridge.
