WhyVegan Chocolate Chip Muffins?
Vegan Chocolate Chip Muffins are quickly creeping into my weekly meal plans and we are so happy about it!
Not only are vegan recipes dairy free but they are often full of real food products. With some careful ingredient selection we are able to keep these Vegan Chocolate Chip Muffins peanut free as well – win win 🙂
Deliciously Dense Recipe
These humble muffins will quietly creep into your weekly meal prep because they are so easy to make, bake, and freeze! Your family will be super happy when they are craving a little chocolate and you pull a couple of these out of the freezer for a quick defrost. Voila – super snack is served!
Vegan Chocolate Chip Muffins
- 4 Cups Organic All-Purpose Flour
- 2 Cups White sugar
- 1.5 Cup Semi-Sweet Mini Chocolate Chips Allergen free
- 1 Tbsp Coconut Oil (for greasing the pan)
- 2 Tsp Baking Soda
- 1 Tsp Sea Salt
- 2 Cups Vanilla Almond Milk Alternative milks work as well such as oat or rice.
- 2/3 Cup Vegetable Oil
- 2 Tbsp Vinegar
- 3 Tsp Vanilla Extract optional
Preheat oven to 350°
Place the muffin tin on top of the oven.
Take the coconut oil and put it in one of the muffin holes to liquify.
Sift the dry ingredients together (save the chocolate chips OR add-in alternative as the last step).
Add the liquid ingredients to the mixing bowl. Do not stir until you have them all in there!
Listen for the tiny sound of fizzing (that is the vinegar and baking soda working their magic). Lastly add in the chocolate chips!
Take a moment and spread the melted coconut oil around each of the 24 muffin holes.
I use a heaping 1/4 measuring scoop for each muffin, you do not want to fill right to the top as they will expand slightly while baking.
The great thing about this recipe is that you can easily alter the add-ins to suit your family's preferences. Do your kids love raisins? Add 'em in! Do you have a thing for walnuts? Chop them up and toss them in a batch or two. Just be careful with the cooking time as it may vary depending on the ingredients you sub in. Just make sure to check the timer around the 18-20 minute mark to watch for signs that they are done. You do not want to burn these bad boys!
