The amazing thing about this ingredient medley is that it tastes even better the next day! It is perfect for meal prepping on those busy nights.
What I especially appreciate about this soup is the healing power it possesses. I kid you not, homemade chicken noodle soup is known the world over for its’ healing properties. People who are into the ‘leaky gut’ mindset swear by bone broth. When I was in university, my roommate’s best friend came out to visit us. They arrived off of their flight with a massive migraine and it was no wonder considering they flew in on one of the snowiest, windiest weekends of the winter. After shaking off tons of snow, melting the frozen chunks off of their eyelashes, they ate a bowl of this homemade soup. Within the hour, we were all laughing and enjoying the evening together, migraine gone. It could have been a coincidence, but I think this veggie packed Chicken Noodle Soup had something to do with it 🙂
Easy to Adapt
This recipe easily adapts to your family’s preferences. As this point, I prefer to make this Chicken Noodle Soup into more of a stew since it helps my little ones eat more, and wear less at dinnertime. I add extra carrots, less celery, and larger chunks of onion so they are easier to pick out. Depending on the day, onions are either loved or loathed on the dinner tray.
Chicken Noodle Soup Stew
This soup will fill your family's bellies and your home with amazing homemade goodness. These ingredients are easy to acquire and even easier to toss together. What I really like about this meal is that it stays good for days in the fridge, gotta love meals that can be repurposed for future meals.
- 4 Cups Cooked, cubed chicken (Bone in chicken tastes best)
- 4 or 5 Cups Chicken Broth
- 1 Cup Chicken Broth Excess water from the cooked chicken
- 1 Cup Parred Carrots
- 1 Cup Chopped Celery
- 1 Cup Spaghettini Broken into small pieces
- 1 White Onion, diced
- 3 Sprigs Thyme Fresh
- 1 Tsp Sea Salt
- 1 Tsp Ground Pepper
- 1 Minced Garlic Clove
Cook your chicken until done (165 °F) If you are cooking your chicken on the same day, save the juices that the chicken leaves in the pan.

Chop up your vegetables, break up your noodles, mince your garlic, prepare your spices and take out your bone broth.
Add all of you ingredients into a large pot, bring to a boil. The chicken here is pulled and not cubed. This batch simmered for a few hours so it makes the chicken break down into even smaller pieces (easier for toddlers to chew).
Boil your soup for at least 10 minutes or until all the vegetables are tender.
*Note: if you have time, this soup tastes the best when it has time to simmer for hours*
