Some people may wonder why I am making the effort to offer vegetarian and vegan meals each week. I think it is important to offer toddler meals that are plant-based, not only for the automatic increase of veggies but also for the positive environmental impact. Since we are a milk allergy family, I have come across many amazing vegan families who are passionate about their lifestyle and it has opened my eyes to the improvement of our carbon footprint with the simple elimination of dairy and dairy byproducts. I am also kind of digging the new direction of the guidelines in, Canada’s Food Guide:
What is needed is a shift towards a high proportion of plant-based foods, without necessarily excluding animal foods altogether. Animal foods such as eggs, fish and other seafood, poultry, lean red meats such game meats, lower fat milk and yogurt, as well as cheeses lower in sodium and fat are nutritious ‘everyday’ foods.
