This meal is great for babies*, toddlers, and adults. The cooked cabbage has an excellent consistency for little ones that are learning to manipulate adult meals. This meal is peanut free, with no dairy, and only contains ingredients that you can pronounce (real food)! Cabbage roll soup is great for busy nights when you have limited time, but you still want to prepare a healthy, warm dinner from scratch.

We really like this meal anytime of the year. It is an especially awesome meal on rainy camping days when you need to warm up! I like to precook the beef, drain it, and then freeze it to make this meal even easier to prepare. I am not going to lie though, we are definitely, “glampers” so we have the convenience of a freezer during our trips.

Ingredients

Main Ingredients

  • 10 Cups Chopped Cabbage Washed, Core Removed
  • 1 Lb Cooked Lean Ground Beef
  • 1 Tbsp Olive Oil
  • 4 Cups Beef Broth
  • 1 Can Diced Tomatoes 28 Fl. Oz
  • 2 Whole Chopped Carrots Washed, peels removed
  • 1 Cup Tomato Sauce Add more as desired
  • 1 Dried Bay Leaf

Optional

  • 1 Onion Diced White or yellow
  • 1 Tsp Thyme
  • 1 Tsp Paprika Smoked is also delish!
  • 1 Clove Roasted Garlic 1 Tsp Freeze dried

Instructions

  1. Put the olive oil into a preheated frying pan (medium heat). 

    Add the beef, cook until well done. 

    Soften the diced onion by adding it to the cooked beef (cook for about 5 minutes). 

  2. While the beef is cooking add the 4 cups of beef broth to your pot (low heat). 

    Also prepare your onion, cabbage, and carrots. 

  3. Slowly add in all of the cabbage into the pot, boil for at least 10 minutes before adding in the other veggies. 

  4. When the beef/onion is cooked combine it with the pot of veggies, spices, and broth. 

  5. Bring the broth, beef, veggies, and spices to a boil (for 5 minutes). 

  6. Your soup is ready! However, the longer you let it stew the tastier it will become.

We like to cook Basmati rice or whole wheat pasta to serve with or underneath this delicious Cabbage Roll Soup.
